Coca Cola Campfire Ribs


I recently spent some time camping in Tofino, and the raging campfire was the only thing that made me feel safe in a forest full of scary wild animal monsters. Cooking over a fire is one of my most favourite things, and we had a birthday to celebrate so ribs became the meal of choice. After asking Mr.Google his advice on how to accomplish such a task, we created a never ever before seen bbq ribs recipe that was easy as pie and a fantastic party trick. You’ll need a dutch oven, a fire and 5 ingredients (ribs, bbq sauce, can of coke, peppers, and onions). Throw those together in the dutch oven, cook for an hour and you’re ready to go.


TAKES: 1-2 hours

MAKES: 5 servings


INGREDIENTS

  • Ribs of choice (I used 2 racks of baby back ribs)

  • 1 large onion, sliced

  • 1 can of cola or sub for a can of beer

  • 2-3 red/orange peppers sliced

  • BBQ sauce of choice

  • Salt & Pepper


INSTRUCTIONS

  1. Build a big old fire. We had a fire pit with a grate over top, but if you don’t then just get that fire rip-roaring so there are white-hot coals to rest your dutch oven on.

  2. Cut the ribs into 4 rib servings, season with a generous amount of salt and pepper and set aside.

  3. Throw your sliced onions into the dutch oven, next layer your sliced peppers over top and then finally place your ribs on top of the peppers.

  4. Slather bbq sauce over the ribs, and pour the can of cola or beer over the ribs.

  5. Close the dutch oven up and set over the fire for an hour. After an hour take a peek to see what magic is cooking up inside of that cauldron. You’ll know the ribs are done when the meat starts to pull away from the bone.

  6. Once the ribs are done, remove the dutch oven from the fire and serve right away with whatever accoutrements set your heart on fire.
