SWEET AROMATIC SOY SAUCE (Fu zhi Jiang You)

A ‘re-made’ soy sauce and staple of Sichuanese kitchens, this soy sauce is pure magic. One of the highlights of Fuschia Dunlop's book, it's made by simmering light soy sauce with sugar and spices until it is sweet, fragrant, and syrupy.


INGREDIENTS

  • 1-3 cardamon pods

  • 1 star anise

  • 1 piece of cinnamon bark

  • 1 bay leaf

  • 1 slice of ginger

  • 1 tsp of fennel seeds

  • 1/2 tsp of Sichuan peppercorns

  • 2 cups light soy sauce

  • 3/4 cup superfine sugar (I used regular white sugar)

  • 1/2 cup brown sugar


INSTRUCTIONS

  1. Place the spices and soy sauce in a small saucepan and bring to a boil. (I place the spices in a muslin bag but you can also just strain out the spices using a sieve)

  2. Once boiling, turn down to a slow simmer for 30 min.

  3. Remove the spices, and add the sugar, stir to dissolve.

  4. Bring to a boil, and then turn off the heat and let this cool.

  5. Store in a bottle or jar in the fridge.
